Chikuyotei @ The InterContinental, Singapore

RATING: ★★☆☆ – GOOD   |   PRICE: $$$ - EXPENSIVE

Surviving as a traditional specialty Japanese restaurant can be difficult in Singapore where the more trendy overpriced pseudo-Edo cuisine seems to reign Supreme in the small city-state. Yet as a specialist in unagi, Chikuyotei still retains a small but loyal cult following who appreciates the craft and quality which at the heart of the cuisine served at Chikuyotei.

The eel is fatty and grilled over charcoal embers for intense flavor. The proprietary eel sauce which differentiates every unagi restaurant is subtle and slightly viscous with hints of aged soy, dried sardines and only a light touch of sweetness. Delicious, refined and satisfying.

Considering the ridiculous prices some fine-dining Japanese establishments charge in Singapore for a proper Kaiseki dinner at Chikuyotei is a much-welcomed reprieve and represents great value for the entire omakase unagi experience.
