Machida Shoten, Singapore


The Ramen market in Singapore is mature and saturated; Ramen restaurants have die-hard ardent fans and have perfected their craft using local produce to an exact science. Yet deep from within the depth of the Ramen motherland rises a new player in the scene, Machida Shoten hails from Kanagawa prefecture has made its first appearance in the Japanese Food Town within the Wisma Atria shopping center in Singapore. 

Specializing in the Iekei school of ramen, a type of pork bone and soy based ramen, Machida Shoten’s rendition of the noodle dish is surprisingly robust with oily gelatinous broth making the dish feel in excess of a thousand calories a bowl. While the broth was mouth-wateringly good the noodles were distinctively factory-made and reminiscent of Chinese variations of ‘yellow noodles’ a large departure away from what is usually expected from handmade noodles.

Machida Shoten has to focus on continued improvements to localization if they want to remain a strong contender in the challenging Singapore ramen scene.
