Tempura Kohaku 天ぷら琥珀, Singapore

Every large city has its fair share of food-hypes and trends but Singapore really takes the cake in sheer volume of food trends almost all of which are always short lived and often fades into oblivion together with the copious number of copycat restaurants; such is life and these are causalities of food battles. Kohaku may be the first of it’s kind in Singapore and arguably may even have started the tendon craze in Singapore but still leaves a lot to be desired.

Tendon is comprised of the trinity of Tempura, Tendon sauce, and Japanese rice. The variation at Kohaku is mediocre at best; tempura is delicately fried but lacks crispness, the sauce has an over processed syrupy consistency and the rice lacks the aromatics usually found in higher grades of Japanese rice. That said, the rice bowl is still mightily delicious and filled to the brim with a very generous portion of fried tempura (prawns, pumpkin, chicken, squid, and mushrooms), considering how each bowl is only $15, it's definitely worth braving the snaking queue lines once to try a bowl or two… Just once
