The idea of Atsumori あつもり is when you request for a hot stone to be added to your  broth once you are done with the noodles and want to drink it as a soup. Tetsu's is arguably the restaurant with started this hot stone in lukewarm broth craze a decade or so ago and the tsukemen is very good; the broth is extremely rich and contains loads of gelatinous collagen-rich oils which coats and adds dept to each string of noodle.

Also highly recommended is the hiyashi chuka (冷やし中華), which is a dry variation on the noodle dish and combines stacks of vegetables and bonito flakes it is absolutely delicious.

Despite our rave reviews about the food at Tetsu's, many stores are showing signs of age and lack maintenance resulting in less than stellar ambiance.
